We present recent results on the quantum estimation of parameters characterizing structured Ohmic environments, by means of probing with both continuous and discretevariables quantum systems. In particular, we investigate the optimal strategies to estimate the cutoff frequency and the temperature of Ohmic environments, through quantum probing with Gaussian states and qubit states.
